A.压榨葡萄
葡萄丰收后,会在一个横放的酿酒桶里被压榨出汁.葡萄汁进行约三个星期时间发酵过程后,酒体成为白葡萄酒,酒精度约9度.但是此时的酒很涩且不净,还不能饮用,所以还要进行下一步蒸馏过程.
B.蒸馏
蒸馏程序把白葡萄酒的成分分解开来,让酒体发热,把其蒸发出来的凝结气体—-也就是‘馏出液’提取出来.这种馏出液只包含和气味还有酒精香,类似被提纯的白葡萄酒.我们把蒸馏后的酒叫‘生命之水’,它此时还是十分透明的液体.在法国,‘生命之水’有不少销售市场.
1.第一步
葡萄酒被放入一个铜制的蒸馏锅炉里面.这种锅炉的形状像葫芦,顶部像洋葱头.它把葡萄酒加热到沸腾.
2.第二步
然后酒的蒸汽将进入一个铜制管道,叫‘天鹅颈’.这些蒸汽从‘洋葱头’进入天鹅颈,然后被导入一个冷凝器.最轻薄的蒸汽最先到达冷凝器.天鹅颈有时候会通过一个热酒器:这样做的话,两次蒸馏中间的时间和消耗的能源会减少.因为天鹅颈里面那些炽热的气体将会加热热酒器里的葡萄酒,这样一来蒸馏结束后马上就可以制作新的一轮‘生命之水’.
3.第三步
在冷凝器里,炽热的蒸汽凝结成液体,滴入管道.此时的液体在27度到32度之间,接着又被导入蒸馏锅炉中进行第二次蒸馏.
4.第二次蒸馏之后
最先形成液体的水滴将会被隔开.然后,‘生命之水’的‘心脏’来了,这部分水滴是最纯净最透明的.最后到来的水滴称‘生命之水的尾巴’也同样被隔离开.所以只有中间到来的‘生命之水’会被用来制作干邑.要注意的是‘生命之水’并不等同于干邑:它还需要在橡木桶里进行陈化.
